Raw Chocolate Pudding Parfaits
Vegan
serves 2-3


1 avocado
1/4 cup raw cacao powder
1/4 cup raw agave nectar
1 teaspoon vanilla
rice milk to desired consistency
lots of LOVE

For the garnish:
6 strawberries, chopped
2 tablespoons toasted coconut
3 teaspoons raw cacao nibs
mint leaves


Put a lot of love and a small amount of rice milk in the bottom of the blender, add the avocado, cacao powder, agave and vanilla and blend until extremely smooth. Keep adding rice milk as needed to aid the blending, but make sure to not add too much you want it to be a thick pudding texture. I like to make the pudding ahead of time so it can sit in the frig to chill for a few hours.

To serve fill two large wine goblets with the desired amount of pudding, spoon chopped strawberries on top and then sprinkle with toasted coconut and raw cacao nibs, and garnish with a mint leaf.
