Scones |
What is a tea party without scones? Answer: a lame tea party. Homemade scones are full of flavor, unlike the things resembling hockey pucks you will find at that coffee shop with the mermaid lady logo.
Makes: 12 Scones
2 1/2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup butter
2 eggs, beaten
3/4 cup whipping cream
1/2 cup dried raisins, cranberries, or other fruit
1/4 teaspoon orange or lemon zest
1/4 teaspoon almond or vanilla extract
- Preheat oven to 400º F.
- In a large bowl combine flour, sugar, baking powder, and salt. Using your CLEAN hands or a pastry blender, cut in the butter until it resembles coarse crumbs.
- In a medium bowl combine eggs, whipping cream, and zest and dried fruits. Add to flour mixture. Stir with a fork until just moistened.
- Place dough on lightly floured surface. Knead dough by folding and gently pressing until dough is nearly smooth (10-12 times). Divide dough in half. Roll each half into a 6-inch circle, then cut each circle into six wedges.
- Place scones 2 inches apart on ungreased baking sheet. Brush with a little more whipping cream and sprinkle with some sugar (optional).
- Bake for 12-14 minutes. Serve with butter and jam, or, if you can find it, clotted cream or Devonshire cream.
