Cucumber Sandwiches |
Makes: more sandwiches the smaller you cut them
Soften 8 ounces of cream cheese, Chèvre goat cheese, or Tofutti Better Than Cream Cheese to room temperature. Mix in 1 tablespoon dried dill weed, 1/2 teaspoon of garlic powder and a few cracks of freshly ground black pepper. Thinly slice a peeled English cucumber. Place over your eyes to soothe those puffy eyelids. Make sure you remove them before proceeding.
Spread the cheesy herb mixture on two slices of sourdough bread. Layer one side with cucumbers (not the ones you put on your eyelids, please) and there, you have a sandwich. Cut into triangles, and cut the crust off. Go feed the crusts to some ducks. Before you go, place the sandwiches on a plate, cover with a moist paper towel, and wrap in plastic.
